Tasty Tuesday!

This recipe comes from my Polish roommate/best friend. Here’s how to make Catie B Kielbasa!

What you need:

1 package Healthy Ones smoked sausage

1 red bell pepper

1 orange bell pepper

1 yellow bell pepper

1 cup water

What you do

1. Cut up the smoked sausage into slices about 1/8 to 1/4 inch thick.

2. Cut the peppers into 1/4 inch thick slices.

3. Pour some water into a skillet, enough water to cover the bottom of the skillet.

4. Warm up the skillet on medium-high heat.

5. Place the sausage into the pan.

6. Once the sausage is brown, place the peppers in the pan.

7. Cover and turn to low heat. When the peppers are too your liking in terms of firmness, turn off heat and serve!

If you want to use what we do for the side, buy a Lipton Sides Rice Pilaf packet. That rice is so good! We also eat this meal with salad. This was an excellent way to end my day :)

I’m very sick with some stomach thing that has decided to ravage my body, thus stealing from me the ability to eat, the ability to hold down anything, and my hard earned weight. Most people who be ecstatic to lose weight, but being an ectomorph, any weight that I can get from weight training is a blessing and something to hold on to! So instead of being 6 pounds away from my goal weight, I am now 12 lbs away. Boo.

So for this Tasty Tuesday, I am “borrowing” a recipe, kind of, from one of MizFit’s readers. Since I cannot eat anything, and basically can’t move much farther than my bed to the bathroom, I don’t have a picture or comments. But it sounds really good and healthy, which is the goal, right?

As promised, here’s Tasty Tuesday! To start things off, this week’s recipe comes from Oxygen magazine. I actually made this a few weeks ago and it was delicious!

Roasted Chicken Breast w/Red Potatoes and Asparagus

What you need:

Cooking Spray

3lb boneless, skinless chicken breast, chopped into 2 inch cubes

2 lb red potatoes chopped into 2 inch cubes (leave the skin on)

1.5 cups chopped Roma tomatoes (or you can used canned diced tomatoes; I used one with garlic and onion seasoning)

1 bunch asparagus, trimmed and cut into about 1 inch pieces

3/4 cup chopped fresh basil

8 cloves thinly sliced garlic

3 tbsp olive oil

1 tsp chopped fresh rosemary

ground pepper to taste

Here’s what you do:

1. Preheat oven to 400 degrees F

2. Spray a baking dish with cooking spray

3. Add chicken, potatoes, tomatoes, asparagus, basil, garlic and olive oil. Sprinkle with rosemary and add pepper if you want.

4. Bake for 20-30 minutes (mine took 30 minutes) and turn occasionally.

5. Eat it!

I’ve decided to share my love of food and healthy cooking with my readers, so beginning tomorrow, I will have a weekly segment called “Tasty Tuesdays.” I will share my personal recipes, as well as those sent to me by you!
